What you need to perform it
Primary qualification
- Regulated pastry/bakery training: in Spain, the intermediate vocational diploma in Bakery, Pastry and Confectionery; internationally, a culinary-school pastry diploma (indicative).
- Accredited progression in high-volume kitchens: the shipboard Pastry Chef rank requires previous contracts in cruise or hotel pastry/bakery sections.
Basic STCW
- STCW A-VI/1 Basic Safety Training and A-VI/6-1 security awareness.
- STCW Regulation V/2 passenger-ship training: emergency familiarisation; crowd management if assigned passenger duties in the muster list.
- Valid seafarer medical certificate (ENG1 or flag equivalent).
Specific courses
- HACCP and food-handling certification, with periodic refreshers.
- USPH/VSP sanitation standard (CDC) for US port calls and equivalent European programmes (EU SHIPSAN) — periodic onboard audits.
- Allergen management (the 14 allergens of mandatory declaration under Regulation (EU) 1169/2011) and ingredient traceability.
- Industrial production: rotary ovens, controlled fermentation, cold chain and ice-cream making (per ship equipment, indicative).
Indicative experience
As a guide: 5–8 years in a bakery or pastry section, including 2+ in 5-star hotels, high-volume catering or cruise ships. On board leads teams of 5–15 (pastry cooks, bakers, ice-cream makers) producing for thousands of covers daily.
Observations
Route: Commis Pâtissier → Pastry Demi/Chef de Partie → Pastry Sous Chef → Pastry Chef → fleet Executive Pastry Chef. The USPH inspection is scored out of 100 with 86 as the passing mark (indicative — verify the current VSP manual): temperatures, labelling, traceability and bakery condition; a serious failure carries direct cost for the company. Night shifts are structural — bread production sets the department's clock.
What this role does
Night shifts so the bread is ready by dawn, and industrial-scale production to a luxury-hotel standard: thousands of pastries, plated desserts and showpieces every day. The bakery is also one of the ship's most audited areas for sanitation, with inspections that can condition the company's operation in certain ports.
